Bromelain is an enzyme, which occurs in all parts of the pineapple plant. However, the stem is the most common commercial source, because here bromelain is also available outside the fruit harvest.The pineapple has a long tradition among the indigenous people of South and Central America. Bromelain was first isolated in 1891 by the Venezuelan chemist Vicente Marcano during the fermentation of the pineapple fruit. In 1892, Russell Henry Chittenden examined the matter more closely with the support of Elliott P. Joslin and Frank Sherman Meara and called it Bromelin. Later, the term Bromelain was introduced.
Bromelain production
Bromelain is extracted from the skin, stem, leaves and other parts of the pineapple plant, after the fruit has been processed into juice or other purposes. The basic material is mixed and pressed through a filter to obtain a fluid which contains the soluble bromelain enzyme. Further processing includes purification and concentration of the enzyme.After one hour at 40°C, practically 100% of the enzyme remains active, whereas only 83% remains active at 50°C. Eight minutes at 80°C is enough to inactivate the enzyme almost completely.
