Iron is one of the essential trace elements. The human organism contains approx. 2.5 to 4 grams of this mineral. Approx. 70% of which are in the haemoglobin (red blood pigment). About 9% are in the similarly structured muscle pigment myoglobin. Iron can also be found in its storage form ferritin in the spleen, liver and the intestinal mucosa.The red blood cells, which contain the haemoglobin with 70% of the total iron in the body, only have a lifespan of 100 to 120 days. That is why 8 to 9 mg haemoglobin have to be synthesised daily, which is equivalent to an amount of 25 to 30mg iron per day.
Functions of iron
Iron has three functions in the human organism: transporting and storing oxygen, transporting electrons and enzymatic reactions. In the red blood pigment, iron binds oxygen, so it can get into all body cells via the blood. In case a cell needs oxygen, the iron-oxygen bond dissociates and the oxygen is released. This is how all enzymatic metabolic processes, which have a high oxygen requirement, are regulated by iron. In the muscle pigment myoglobin, iron holds on to the oxygen, which is needed for the muscle movements, and releases it on demand.Bioavailability
The naturally occurring iron in plant-based food is usually poorly resorbable. It is bound differently and only 5 to 8% of the contained iron are actually resorbed. Foods, which contain strong complexing agents, or acids, which form not easily soluble compounds with iron ions such as oxalic acid (from spinach and rhubarb), inhibit or reduce the resorption of iron. Foods with an especially good iron bioavailability are meat (20-30%) and liver (10-20%).Iron with a high bioavailability supports the optimal supply of the body. The three iron compounds of the dietary supplement Iron Complex are bivalent iron compounds, which can be resorbed well in the small intestine.
Bivalent iron is also called “functional iron”, because the body is able to use it directly for the production of haemoglobin and the formation of enzymes. Bivalent iron is also build into the different storage systems of the organism.
